Cooked at 1,000 degrees Celsius: Guatemalan Volcanic Pizza

Cook pizza at the volcanic Laza of Pacaya volcano, 25 km south of the capital of Guatemala

Guatemala’s Pacaya volcano has been erupting since February and has been vigilant to local communities and authorities.


But for David Garcia, the flow of lava oozing from the hillside became his kitchen.

Garcia, a 34-year-old accountant, offers awe-inspiring tourists and locals with “Pakaya Pizza” cooked in smoldering volcanic rocks.

“Today, many people are enjoying the experience of eating pizza made from the heat of the volcano,” Garcia told AFP from the rocks leading to the Pacaya crater, and he turned to work.

Garcia spreads the dough on a metal platter that can withstand temperatures up to 1,000 degrees Celsius (1,800 degrees Fahrenheit) in a makeshift kitchen and beats the dough with plenty of tomato sauce, cheese and pieces of meat.

Wearing protective clothing from the head to military-style boots, Garcia puts the pizza on the lava.

“That’s it. Melt the cheese a little more,” he announces 10 minutes later.

“That pizza looks very good!” Shouts one of the tourists as a cheese bubble.

Garcia’s kitchen is an attractive place for appetizing tourists to climb a huge volcano (one of the three active volcanoes in Guatemala) 25 kilometers (15 miles) south of the capital.

“Only” in Guatemala

In 2013 he started baking pizza on the mountain side in a small cave in the rock.

“It didn’t sell very well in the first few days,” said Garcia, whose fame spread throughout social media.

For the past few weeks, Pacaya has regularly spit out lava and began cooking pizza directly on the moving lava. Some of them are approaching densely populated areas.

Given that the ash eruption was blown into the sky by an angry beast, it was a potentially dangerous task, and some local villagers begged to stop it.

“Cooking pizza on the embers of a volcano is amazing and unique worldwide,” said tourist Felipardana, who is trying out one of Garcia’s specialties.

He learned about pizza joints on Facebook and thought, “I have to have this experience.”

“It’s ridiculous to think of eating lava-cooked food, but you can only see it here,” said Celtic van Mule’s, a Dutch visitor.
